Job Title: Carcass Cutters
Company: Budget Meat Shop

Responsibilities:
Primary Processing: Breaking down whole carcasses or quarters according to daily production plans and exact specifications.
Trimming & Deboning: Removing bones, excess fat, skin, and bruising to produce clean retail-ready.
Packaging & Display: Weighing, wrapping, labeling, and organizing products.
Hygiene & Equipment Maintenance: Sanitizing work areas, cold storage, and maintaining/sharpening cutting tools to meet food safety standards.

Requirements:
5 Ordinary Levels.
Anatomy Knowledge: Understanding bone structures, tendons, and muscle grains.
Knife Mastery: Skill in using heavy cleavers, boning knives, table saws and breaking knives.
Food Safety Knowledge: Strict adherence to temperature controls and cross-contamination prevention.
Yield Optimization: Ability to maximize edible yield and minimize waste.
